Healthy Mac & Cheese

This recipe is gluten, soy, dairy, corn, egg free!

(gf, sf, df, cf, ef)

 

Ingredients:

1 cup raw cashews (soaked in warm water for 20 minutes)   

2 cup gold potatoes 

2 cup carrots                         

1 cup plant milk

3 tbsp lemon juice                                 

1 tsp garlic powder                              

1 tsp onion powder

1/2 tsp smoked paprika

2 tsp sea salt

1 tsp cumin

⅛ tsp cayenne 

1/4 jar jalapeños 

1 tbsp coconut aminos

 

Instructions:

  1. Soak cashews in warm water for 20 minutes. Soaking longer is ok too.

  2. Steam the potatoes & carrots until tender.

  3. Add all the ingredients into a high speed blender & blend until smooth & creamy!
