This recipe is gluten, soy, dairy, corn, egg free!

(gf, sf, df, cf, ef)

 

Ingredients:

2 cup raw cashews 

2 cups organic cherry tomatoes

2 cups organic fresh basil

2 cups of organic spinach

2 tsp sea salt (add more to taste)

pepper to taste

smoked paprika to taste

6 organic garlic cloves

3 tbsp organic lemon juice 

1/2 cup organic veggie broth (add more in as you blend if needed) (make sure there are no fillers in this-read your labels or make your own here)

1 box of gf, sf, cf pasta of your choice

Optional: could add a vegan, chemical free parmesan cheese on top of pasta after meal is prepped.

 

Instructions:

  1. Take 2 cups of raw cashews & soak in filtered water for 1-4 hours. This helps get the cashews soft to better blend. 

  2. Boil water for pasta of your choice. I liked my favorite linked below! 

  3. Wash all veggies well. See blog on how to clean your produce!

  4. Put into a food processor: drained cashews, tomatoes, basil, spinach, salt & pepper, smoked paprika, garlic, lemon juice, veggie broth & MIX. You will want to mix this until everything is blended pretty smooth. Scrap the sides occasionally. The texture will have a few chunks from the cashews when done. 

  5. Drain pasta when done. 

  6. Place pasta in a bowl, add on the sauce to the top, sprinkle (optional) vegan parmesan cheese on top & enjoy!!! :)
