Da red Pasta

 

INGREDIEnTS: 

2/3 cup cashew (roasted and put aside)

3 cups red peppers (roasted to soften and char)

2 cups fresh basil 

2 full garlic bulbs 

1 cup olive oil 

S&P (to taste)

1 box of gluten free pasta of choice 

How To:

INSTRUCTIONS: 

  1. Toast cashews and put aside 

  2. Boil water for pasta while doing step 1 and cook pasta until done. When done save about 3/4 cup of water from cooked pasta. Drain and rinse pasta.

  3. Place all the ingredients above (not the noodles) into a blender. Blend until your desired consistency.  I like my consistency to be a little chunky and smooth. I also like it to be a bit thicker so I do not add in as much oil right away and add it as I go. Make sure to taste this along the way. You may need more salt or oil, etc. 

  4. Take your strained noodles and add to a low heated pan. Add in the water you saved. I add in about half at first. I then add about 1 cup of the blended sauce to this. I mix and see if the noodles need more water and more sauce. Again, this is your recipe so make it to your liking. Go off your visual and taste to get it to what you like - be creative! 

  5. I add fresh basil, cherry tomatoes, chives to top!
